Blueberry Muffins Recipe

240g all-purpose flour
2 tsp baking powder
Pinch of salt
120g unsalted butter (room temperature)
170g granulated sugar
2 large eggs(room temperature)
1tsp vanilla extract
180ml whole milk (room temperature)
200g blueberries

Direction
Preheat the oven to 400°F/200°C.
Line a 12-cup muffin pan with paper liners. In a medium bowl whisk together the flour, baking powder, and salt and set aside. In a small bowl combine the blueberries with about a tablespoon of the dry mixture.

In a large bowl beat the sugar, butter, and eggs together on a medium speed until light and fluffy about 5 minutes. Add in the vanilla.
Add the flour mixture to the butter mixture in 3 parts, alternating with milk. Stir in the blueberries. Divide the batter among the paper liners. Sprinkle with coarse sugar or add blueberries on top, if desired.

Bake for about 20 minutes or until the tops are golden brown.
