Carrot Pachadi

1. Take a kadai and add in grated carrot.
2. Season with some salt and turmeric powder.
3. Pour in some water.
4. Cover and cook for 10 mins or until the carrot is cooked.
5. Switch off the flame and let it cool down a bit.
6. Make seasoning by heating oil and crackling some mustard, cumin, dry red chilli and shallots. Cook this till the shallots is golden brown.
7. Pour in curd to the cooled carrot mixture and mix well.
8. Pour this seasoning over the pachadi and mix well.
9. Add a tsp of sugar and mix well.
10. This brings out the natural sweetness of this dish.
11. Serve with rice.
