This is an ideal recipe for weekly food prep! In fact it is better the next day! I'll be adding more healthy choices to this channel in the upcoming weeks. Try this one, it will become a favorite.

Here are the ingredients you will need:
1 cup cooked brown rice (1/2 cup raw)
1/2 cup cooked lentils (1/4 cup raw)
1 pound dried chickpeas or 2 cans (see link below to learn how to cook chickpeas in your InstaPot)

Seasoning for roasting chickpeas:
Salt & Pepper
1-2 tsp smoked Paprika
1-2 tsp cumin
1 tsp turmeric
1-2 TBP olive oil

Cold vegetables:
1/2 cucumber diced
1/3 red onion diced
Parsley - fresh or dried
1 tomato diced

Dressing:
2 TBP lemon juice
2 tsp Za'atar seasoning (you can use more)
2 TBP tahini
2 TBP olive oil
