Archery season for white tail deer and wild Turkey in Illinois. My son Dan was lucky to harvest 2 does. Short illustration of how we butcher the deer in the field. We don’t field dress to avoid meat contamination from deer body fluids, especially with a gut shot. We don’t use the internal organs also. Since I have been butchering the deer the gamey taste has been eliminated. I have tried different recipes and spices to cook the venison butchered by the butcher shop in the past but unable to eliminate the gamey taste.
