Scalloped Potatoes, But Make it a ROLL-UP / VEGAN

I originally saw someone make this non-vegan, but thought it would be a good challenge! To my surprise it was very easy! 100% Vegan and Gluten free!

Recipe:
- olive oil
- 3 large russet potates
- 1/2 cup dry green or brown lentils
- vegan cheese
- 1 bell pepper diced
- 1 onion diced
- 4-6 cloves garlic, minced
- salt
- paprika
- onion powder

Seasonings:
- salt and pepper to taste
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp oregano
- few shakes cayenne powder
- 1 tsp heaped tomato paste
- 2-3 tbsp marinara

1) cook lentils for 15-20 mins
2) sautée all veg, then add lentils and seasonings
3) slice potatoes and layer them overlapping on top of cheese
4) Bake at 400f for 20- 25 mins, add toppings and roll from the short side placed seam down, cover with more vegan cheese and add it back into the oven for 7-10 minutes. Allow to cool 5-10 before slicing and enjoy!
