✔️Learn how to make Chicken Dum Biriyani in easy steps with AMC.
For 10 persons
(300 calories per person)

✔️For Marination
1 ¼ kg chicken, cut into big chunks
4 tbsp ginger garlic paste
1 tsp turmeric powder
3 tsp chilli powder
2 tsp salt
2 tsp oil
2 cups curd
2 onions sliced and stir fried with 1 tsp oil
1 tsp Cumin powder
3 tbsp coriander powder
2 tsp garam masala powder
2 tsp biriyani masala
3 green chillies, slit

✔️For boiling rice
14 cups water
1 kg Basmati rice washed & soaked
Whole spices (3 black cardamom, 3 green cardamoms, 2” cinnamon, 10 cloves, 4 bay leaves)
Salt to taste

✔️Garnishing
5 tbsp coriander leaves chopped
5 tbsp mint leaves chopped
10 strands of saffron soaked in 6 tbsp milk
2 big onions, sliced and fried with 1 tsp oil

Cooking time :30 min

✔️Method
1. Mix all the ingredients mentioned under marination and keep it in refrigerator for 1 hour.

2. For boiling rice, heat up a pot along with water on highest heat. Set audiotherm at vegetable window with 2 minutes time. Open the lid, add washed and soaked rice along with whole spices. Cook on highest heat until vegetable window, open the lid and allow the rice to boil for Approx.2 minutes. Strain the rice using softeira insert and keep it aside.

3. For layering of biriyani, add the marinated chicken into the pot as bottom layer. Add coriander leaves and mint leaves along with fried onions over the chicken and layer the rice on top. Finally garnish with few more coriander leaves, fried onions and pour in the saffron soaked milk.

4. Close the pot and set the audiotherm at vegetable window with Approx. 5 minutes cooking time. Heat up the pot highest heat until vegetable window, reduce the heat and cook on low heat until done.

5. After the cooking time is completed, leave the pot aside for about 15 minutes. Open the lid, mix the rice and serve hot.
