How to make easy black rice step by step in paella. A rice with ink, typical of the Mediterranean (Alicante, Castellón, Valencia, Murcia, Tarragona). You can substitute squid for cuttlefish, squid or corn and shrimp for prawns or red prawns.

Ingredients for 6 people

600 gr. rice bomb
Extra Virgin Olive Oil
1 onion
1-2 roasted red peppers (or piquillo peppers)
1 kg of clean squid, reserving the ink (2 envelopes of ink can be used)
500 gr. prawns
Soft pickle (2 tomatoes, ñora, ground pepper and garlic)
1 glass of white wine
squid ink or 2 ink sachets (sold at fishmongers)
1 teaspoon of sweet and sour paprika from La Vera.
1.8 liters of fish broth, (rock fish and crab and prawn heads fumet flamed to whiskey)
Salt
