On a recent trip to Thailand, Jeremy and the team visited a small local restaurant in the heart of Bangkok, where they enjoyed the best fried chicken they'd ever eaten. It was so good that Jeremy has made it his mission to try his best to recreate the deliciously crispy batter while keeping all of the juiciness of the chicken in tact!
Ingredients
6 chicken thighs and legs
6-7 large cloves garlic
4-5 spring onions
Handful coriander
1 tsp black pepper
1 tsp white pepper
1.5 Tbsp sugar
2 Tbsp fried shallots
3 Tbsp fish sauce
5 Tbsp water
7 Tbsp rice flour
1 Tbsp cornflour
Oil for deep frying
