Hyderabadi Masala Chicken is a popular Indian dish known for its rich, spicy, and aromatic flavors. It's a perfect blend of spices and tender chicken, making it a favorite among food enthusiasts.

Ingredients:

1 kg chicken, cut into pieces
1 tablespoon yogurt
1 teaspoon ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon cumin powder  
1 teaspoon coriander powder  
1/2 teaspoon cardamom powder
1/2 teaspoon cloves
1/4 teaspoon saffron strands
1 large onion, finely chopped
2 tomatoes, chopped
1 green chili, slit lengthwise
1/2 cup water
Salt to taste
Oil for cooking
Instructions:

Marinate the Chicken:

In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, cardamom powder, cloves, saffron strands, and salt.  
Add the chicken pieces to the marinade and mix well to coat.
Cover and refrigerate for at least 2 hours, or overnight for better flavor.
Cook the Chicken:

Heat oil in a large pot or Dutch oven over medium heat.
Add the marinated chicken pieces and cook until browned on all sides.
Add the chopped onions and cook until softened and golden brown.
Stir in the chopped tomatoes and green chili. Cook until the tomatoes break down and form a thick gravy.
Add the water and simmer for 10-15 minutes, or until the chicken is cooked through and the gravy has thickened.
Serve:

Garnish with fresh cilantro leaves and serve hot with basmati rice, naan, or roti.
Tips:
For a spicier dish, add more red chili powder or a pinch of cayenne pepper.
You can also add a few whole bay leaves to the marinade for added flavor.
For a richer gravy, add a tablespoon of ghee or clarified butter at the end.
