The ADS1115 16 bit ADC module can be used over I2C with Arduino when more analog channels are needed, or a better quality ADC with more features than the built in 10 bit ADC is desired.

Instead of measuring voltage increments of 4.88mV, we can measure 0.1875mV or even better if we use the internal programmable gain amplifier.
