How to make Fish Piccata.
This recipe is a bit different because you will have more delicious sauce for a side of pasta if you wish. And the sauce will have more body.

FISH PICCATA

INGREDIENTS
2 fillets (fish of your choice) we used Speckled Trout
1 Tbsp. Seafood Seasoning
2 Lemons juiced and zested
4 Tbsp. salted butter
4 Tbsp. Olive Oil
All-Purpose flour
1 Tbsp. All-purpose flour for sauce
¼ Capers rinsed
1 cup white wine (chardonnay)
1 half medium sized onion minced
2 toes garlic minced
Fresh parsley

INSTRUCTIONS
Seasoning the fish then dust both sides with flour.
In a 12” skillet, (I’m using a skillet with a lid) add butter and olive oil and heat until butter is melted.
Brown the fish on both sides.
Remove the fish fillets and then add in the minced onion and garlic.
Sauté’ the onions and garlic for 2-3 minutes or until soft.
Add in the table spoon of flour to coat the onions and garlic.
Now add the white wine, lemon juice and capers and mix thoroughly.
Add back the fish. Baste the fish with the sauce as your sauce thickens for just a minute.
Now put the lid on the skillet and simmer for 4 to 5 minutes.
Ready to serve.
