I used my new Brod & Taylor "Sahara" food dehydrator to make this salmon. Eight hours of drying time works well for me. Your drying time might be different. If you live where the humidity is high, such as in Florida, it might take longer. In the desert, such as Nevada, it might require less time.

For the marinade I used:
½ cup (120ml) soy sauce
2 tablespoons brown sugar
¼ teaspoon freshly ground black pepper
1 teaspoon Wright's Liquid Smoke
