Stew Peas is a favorite Jamaican dish, its loaded with salted meat, fresh herbs and spices, and simmer in coconut milk. An
absolutely delicious dish.

Ingredients
2 cups kidney beans
2 pounds salted pigtail or any meat of your choice.
1 cup coconut milk (can or fresh)
4 cloves chopped garlic
1 tosp pimento seeds
3 twigs scallion & thyme
1 tbsp all purpose seasoning
1/2 tsp black pepper
1 whole scotch bonnet pepper
1-2 cups flour (for spinners dumplins

Instructions
Wash Beans with water and drain. Add about 3 cups of water along with 4 cloves of chopped garlic and put to boil.

Add 3-4 cups of water to beans after it comes to a boil (to sink the Beans)

Wash pigtail, put in a large pot of water to boil for about 10-15 minutes to remove excess salt
Rinse pigtail then add to boiling kidney beans, along with pimento seeds.

Stir and cover under low heat and allow to cook for 1-2 hours until beans and meat are tender
Now add 1 cup coconut milk, scallion & thyme, whole pepper and some all purpose seasoning, taste add salt uf needed.

Ingredients for Spinners / Dumplings
1-2 cups flour
1/4 tsp salt
1/3 cup water
In a small bowl, add flour and salt and mix, add water a little at a time and knead to form a smooth dough.
Break dough into small pieces and roll between your palm to make spinners/dumplings, then add to stewed pigtail and beans.
Allow to cook for another 10-15 minutes.
