Making sago vada (also known as sabudana vada) in an appe pan (paniyaram pan) is a healthier alternative to deep-frying them, as you use less oil. Here's how you can make them:

Ingredients:
Sago (Sabudana) - 1 cup (soaked for 4-6 hours or overnight)
Boiled potatoes - 2 (medium-sized, mashed)
Peanuts - 1/4 cup (roasted and coarsely ground)
Green chilies - 2 (finely chopped)
Ginger - 1 tsp (grated)
Garlic- 1 tsp(grated)
Cumin seeds - 1 tsp
Coriander leaves - 2 tbsp (finely chopped)
Salt - as per taste
Oil - as required for greasing the appe pan

Instructions:
Prepare the mixture:

In a large bowl, mix soaked sago (drain well), mashed boiled potatoes, coarsely ground peanuts, green chilies, grated ginger, cumin seeds, chopped coriander, lemon juice, and salt.
Combine everything thoroughly until it forms a dough-like mixture.
Shape the vadas:

Take small portions of the mixture and shape them into small balls, slightly flattening them. They should be small enough to fit into the holes of the appe pan.
Preheat the appe pan:

Grease the appe pan with a little oil in each cavity. Preheat it on medium flame.
Cook the vadas:

Place the prepared vadas into each cavity of the appe pan. Drizzle a little oil on top of each vada.
Cover the pan and let them cook on medium heat for 3-4 minutes or until the bottom is golden brown.
Flip the vadas using a skewer or spoon and cook the other side until crisp and golden.
Serve:

Once cooked, remove the vadas from the pan and serve them hot with yogurt or a green chutney.
By using an appe pan, you significantly reduce the oil content, making the sabudana vadas lighter and less greasy without compromising on flavor.
