March 3 is the Girls' Festival, a day of celebration in Japan.
During Hinamatsuri, people eat Hishimochi, a three-colored sweet consisting of green, white, and pink.

▷Ingredients (for 8 pieces)
■Matcha sponge cake (375mm x 240mm)
3 whole eggs
80 g sugar
83 g cake flour
7 g matcha powder

▷How to make:
1. Add the sugar to the whole eggs and mix until blended.
2. Beat the eggs in a hot water bath at 30℃ until the mixture becomes white and fluffy.
3. Add the cake flour and matcha and mix until glossy.
4. Line a cake roll baking sheet with a cookie sheet, pour in the batter, and flatten it out.
5. Bake in a preheated oven at 170℃ for 12 to 15 minutes, then remove from the baking sheet and allow to cool.
6. When the dough has cooled, cut into 16 5cm x 5cm pieces.

■Sugar syrup
15 ml hot water
15 g sugar

■Whipped cream 
200 ml whipping cream
10g sugar
10 g sweetened condensed milk
1 tsp vanilla extract
24 strawberries

■Strawberry cream
150 ml fresh cream
12 g sugar
2g strawberry powder

▷How to make
1. Mix the ingredients for the sugar syrup and let cool.
2. Add the sugar, sweetened condensed milk, and vanilla extract to the cream and beat until the mixture is loose and stringy.
3. Wash strawberries, remove stems, and cut in half lengthwise.
4. Line a cup with matcha sponge cake and lightly drizzle with syrup. Stick the strawberries on the sides and fill with whipped cream. Place the matcha sponge cake on top, press down lightly, and pour the syrup. Chill in the refrigerator.
5. Make the strawberry cream. Add sugar and strawberry powder to the whipped cream and whip until stiff enough to hold its shape.
6. Put the cream into a large squeeze bag with a large tip, squeeze over the matcha sponge cake, and decorate with strawberries.
