कांदा भजी/ *Kanda Bhaji Recipe*

*Ingredients:*
Besan (gram flour) - 2 cups
Rice flour - 2 tbsp
Onions, chopped - 5 small
Green chilies, chopped - 2-3
Ajwain (carom seeds) - 1 tsp
Jeera (cumin seeds) - 2 tsp
Coriander seeds - 1 tbsp
Salt - to taste
Haldi (turmeric) - a pinch
Water - as needed

*Method:*

1. *Preparation:*
Chop the onions finely and set aside.

2. *Roasting Spices:*
In a pan, add the jeera (cumin seeds) and coriander seeds.
Dry roast them on medium heat until aromatic.
Once roasted, switch off the gas and let them cool.
Pound the roasted spices into a coarse powder.

3. *Making the Batter:*
In a mixing bowl, add the chopped onions.
Add the pounded jeera-coriander powder, ajwain, chopped green chilies, salt, and a pinch of haldi.
Mix everything well.
Gradually add the besan (gram flour) and a splash of water. Mix to combine.
Add more besan and the rice flour to the mixture for crispiness. Mix until well combined.

4. *Frying:*
Heat oil in a deep frying pan.
Take small portions of the batter and drop them into the hot oil.
Fry until the bhajis turn golden brown and crispy.
Remove and drain on paper towels to remove excess oil.

5. *Serving:*
Serve the Kanda Bhaji hot with chutney or ketchup.
