SWEET POTATO SOUP RECIPE

1 Tbsp Olive Oil
1 Large Onion, chopped
1 tsp minced garlic
1 tsp minced ginger
1/4 tsp nutmeg
2 large carrots, chopped
Approx 5 cups chopped sweet potato
(Or you can swap for butternut squash)
2 cups vegetable broth
1 1/2 cups soy milk
1 Tbsp peanut butter
Optional Salt & Pepper to taste

Add olive oil to large pot with chopped onion, garlic, & ginger.
Saute till softened,
Add nutmeg, carrots, & sweet potatoes and stir.
Add in veg broth and soy milk, bring to a boil and then reduce heat to low.
Cook until vegetables are all softened and then remove from heat.
Add in peanut butter and blend with an immersion blender.

Soy milk could be replaced with coconut cream or another plant based milk
of your choice or even with extra vegetable broth.
