- Salt to taste )
- Paella seasoning, with coloring and saffron (can be replaced with saffron emulsion)

Paella used for 6 people: 60 centimeters in diameter (if you don't have one of this size, you can use a smaller one, but the bigger the better)

Procedure:
º- Choose the size of the appropriate Paella (The larger, the better the rice will be)
º- Cut and prepare everything
º- Season the meat
º- Add a little salt to the Paella
º- Put the heat on medium low
º- Add olive oil
º- Level the paella so that the oil is well in the center
º- Sauté the prawns and king prawns and remove them
º- Sauté the crab legs and bodies and remove them
º- Fry the meat
º- add the cuttlefish, put a little salt and fry it together with the meat
º- Preheat the chicken broth on a separate fire)
º- Add the vegetables, put a little salt and fry it all together
º- Add the grated tomato and fry until there is no tomato water left
º- Add the minced garlic and parsley and stir well
º- Add the Rice and fry it for one or two minutes
º- Add Saffron or prepared for Paella and stir
º- Add the paprika, stir for a few seconds and immediately add the broth so that the paprika does not burn (it could give us a bitter taste if it burns)
º- Add the chicken broth, already hot (just in case, have a little hot broth in case you have to add it)
º- Put the heat on high for the first 6 minutes
º- Distribute the rice throughout the Paella (during the first 6 minutes, the rice can be moved without problem, after minute 6, it can no longer be moved)
º- Lower the heat to medium-low
º- Add the Prawns, prawns and crab bodies and legs
º- Stop the fire when the established time has passed and the rice is well cooked (approximately in total it will be about 14 minutes, depending on the type of rice and the power of the fire)
Total 6 minutes over high heat and 8 minutes over low heat (approximately)
º- Let the Paella rest for 5 minutes.... and Enjoy!!!!!
The more Paellas you make, the tastier they will be.
