INGREDIENTS:
For Dhokla:
Gram Flour (рдмреЗрд╕рди) - 1 Cup
Curd (рджрд╣реА) - 1/2 Cup
Water (рдкрд╛рдиреА) - 1/2 Cup
Salt (рдирдордХ) - As per taste
Turmeric powder (рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░) - 2 Pinch
Baking Powder (рдмреЗрдХрд┐рдВрдЧ рдкрд╛рдЙрдбрд░) - 1/4 Tsp
Eno Fruit Salt (рдИрдиреЛ рдлреНрд░реВрдЯ рд╕реЙрд▓реНрдЯ) - 1 Sachet
For Tadka:
Oil (рддреЗрд▓) - 1-2 Tsp
Black Mustard seeds (рд░рд╛рдИ) - 1/2 Tsp
Green chili (рд╣рд░реА рдорд┐рд░реНрдЪ) - 4-5
Curry leaves (рдХрдбрд╝реА рдкрддреНрддрд╛)
Water (рдкрд╛рдиреА) - 3/4 Cup
Sugar (рдЪреАрдиреА) - 2 Tbsp
Salt (рдирдордХ)
Lemon Juice (рдиреАрдВрдмреВ рдХрд╛ рд░рд╕)
Coriander leaves (рдзрдирд┐рдпрд╛ рдкрддреНрддреА)
Desiccated Coconut (рдирд╛рд░рд┐рдпрд▓ рдмреБрд░рд╛рджрд╛)
For Dry Dhokla:
Oil (рддреЗрд▓) - 1 Tsp
Black Mustard seeds (рд░рд╛рдИ) - 1/2 Tsp
Asafoetida (рд╣реАрдВрдЧ) - 2 Pinch
Green chili (рд╣рд░реА рдорд┐рд░реНрдЪ)
Curry leaves (рдХрдбрд╝реА рдкрддреНрддрд╛)
Salt (рдирдордХ)
Red Chilli Powder (рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░)
Water (рдкрд╛рдиреА)

RECIPE:
In a pan, put some Water and place a ring, cover it and keep it for boiling. Take a Cake tin, grease some oil, and keep it aside.
For Dhokla Batter, in a bowl, put some Gram Flour, Salt, Turmeric Powder, whisked Curd in it & mix it in a one direction for 5 mins. Cover it & keep it for 10-15 mins. After then whisk it again for some time. Put Baking Powder, some Eno Fruit Salt in batter & mix it again. Put the Dhokla Batter in a greased tin and keep the tin in the pan. Cover it & give it steam on high flame for 15 mins. Check it by using a toothpick, then turn the flame off and keep the ready Dhokla for cooling down for 15 mins. Then take it out on a plate and cut it into pieces.
For Tadka, put Oil, Mustard Seeds, long chopped Green Chilies & Curry Leaves. Then put some Water, Sugar, Salt, some Lemon Juice. When Sugar gets melted, turn off the flame & put the Tadka on the Dhokla. Garnish the Spongy Dhokla with Coriander Leaves & Desiccated Coconut and enjoy it.
For Dry Dhokla, in a pan, put Oil, Mustard Seeds, Asafoetida, long chopped Green Chilies, Curry Leaves, Salt, Red Chili Powder in it and mix it. Add Dhokla Pieces, some Water mix them and cook a little bit. Garnish the Spongy Dhokla with Desiccated Coconut, Coriander Leaves & Namkeen/Sev and enjoy the Dhokla with Green Chutney.
