Ingredients (Dry Mix):

All-purpose flour: 250 g
Sugar: 125 g
Salt: ½ tsp
Baking powder: 2 tsp

Ingredients (Wet Mix):
Oil: 65 ml
Egg: 1
Milk: 85 ml
Vanilla extract: 1 tsp
Apricot jam: as needed (about 1 tsp per muffin)

Prepare the Dry Ingredients:
In a large bowl, combine all-purpose flour, sugar, salt, and baking powder. Mix well.

Prepare the Wet Ingredients:
In a separate bowl, whisk together oil, egg, milk, and vanilla extract until fully combined.

Combine Wet and Dry Ingredients:
Pour the wet ingredients into the bowl with the dry ingredients. Mix gently until everything is just incorporated. Do not overmix.

Prepare the Muffin Tray:
Grease or line your muffin tray. Pour ⅓ of the batter into each muffin cup.

Add the Apricot Jam:
Add 1 teaspoon of apricot jam in the center of each muffin cup, then cover with the remaining batter.
