Chipotle Tomatillo Salsa - from Ball Canning Book
2 lbs fresh tomatillos, husks removed
1 small onion, unpeeled and quartered
4 garlic cloves, peeled
1/4 cup fresh lime juice
1/2 tsp salt
3 to 4 canned chipotle peppers in adobo sauce

Bruschetta in a Jar - from Ball Canning Website

9 cups chopped cored plum tomatoes (1-inch pieces)
5 cloves garlic, finely chopped
1 cup dry white wine
1 cup white wine vinegar (at least 5% acidity)
1/2 cup water
2 Tbsp sugar
2 Tbsp dried basil
2 Tbsp dried oregano
2 Tbsp balsamic vinegar (at least 5% acidity)
