Everyone loves a low and slow cooked Boston Butt for pulled pork BBQ. I'd like to challenge you to get outside your comfort zone and try this HOT & FAST technique on your next attempt.

This technique is a bit different and requires a few bits of special attention. If you care abouty our bark, you need to start checking for the consistency of the bark at around the 90 minute mark. Your bark will most likely be completely formed inside of 2.5 hours. Mine on this particular cook was ready at the 2 hour mark.

You will definitely want to wrap this butt during the cook because at 400°F, the bark will definitely over cook without it. That step is IMPORTANT!

I also did NOT wait until my grill was fully up to temp before putting the meat on. My grill had only gotten up to about 250°F before I started cooking... no problem :) You can wait if you like but it's ok to go ahead and put the meat on.

I checked this butt for tenderness and internal temperature for the first time during this cook at the 4 hour mark and I'm glad I did because it was READY! It probed like BUTTER so I wrapped it and dropped it in the cooler to rest for a couple hours. It pulled apart as easily as any butt I have ever cooked.
