We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.

▼RECIPE

【Ingredients】 for 2 people
2 chicken thighs with the bone.
2 heads of garlic
1/2 onion
2 potatoes

16 olives

2 sprigs rosemary
2 sprigs of thyme
1 bay leaf

5 tablespoons of olive oil

Salt and pepper

【Preparation】
・ Cut chicken thighs in half and season with salt and pepper.
・ Cut the head of garlic in half with the skins still attached.
・ Cut the onions into quarters and cut the potatoes into small pieces.
・ Preheat the oven to 220 ℃.

【Procedure】
1. In a saucepan, heat the olive oil and sauté the chicken. Remove them.

2. Into the same saucepan, put the garlic, onion, and potato. Place the chicken pieces on top and add the herbs.

3. Bake uncovered at 220 ℃ for 25 minutes.

4. Add olives to finish.
