Homemade Saimin Noodles and Dungeness Crab Broth- Hawaii Cooking

Hey Everyone!
We recently tried to make my grandpa's noodle recipe and I must say, it was harder than it looked. When grandpa made it, it just looked so easy! Unfortunately it took us two tries, but I'm glad we didn't give up and go out and buy noodles. It was definitely worth it to figure out the recipe and you can't beat the taste of fresh noodles!

Saimin Noodle Recipe:
5 lb All purpose flour
7 eggs
12 g Sodium carbonate (bake baking soda at 215 degrees in the oven for 1 hour to get this. Make sure not to touch the substance after it comes out of the oven.
1/8 c. salt
1/3 c. oil

Mix all the wet ingredients together, including the sodium carbonate. Add the mixture slowly to the flour and mix into dough. After the dough becomes "dough-like," break into 4 sections and flatten. Let the dough rest for 1 hour.
The dough should be ready to form into noodles after that.

Dungeness crab broth recipe:
16 C. water
3 Dungeness crab
5-6 shiitake mushrooms
2-3 pieces of konbu
2-3 tsp of butter
2 pkg dashi
3 T. white miso

Use the crab meat to add as garnish in the saimin. It is delicious!
