This Boneless Skinless Smoked Turkey Recipe will no doubt become your favorite way to prepare turkey. I learned this from my friend Nick Woolfolk at the American Royal many years ago. He picked up the method working at Pig Beach in New Jersey.
This method relies on high heat. Your supposed to cook turkey to 165 f right? NO!
Your are supposed to serve it at 165. When you cook at 325-350 the meat will carry enough energy to finish at 165 if you pan it with some warm butter and cover it. Do not set it on a solid surface countertop as it will stop the cooking process. Set it in your room temp microwave or oven to keep it out of the way while it finishes.
