Went out and harvested 4 Carolina Reapers, to make Reaperberry Jam! It is a sweet punch in the mouth, mixing flaming hot Carolina Reaper Peppers and sweet fresh strawberries.
Reaperberry Jam
4 pounds of strawberries
4 Carolina Reapers
4 cups of Sugar
¼ cup of lemon juice
4 tablespoons of powdered pectin
1. Sterilize the jars and keep hot until
2. Clean and hull the berries. Cut them in half and add them to a medium to large pot, with lemon juice.
3. Mash/Crush the strawberries with a potato masher, continuing to stir as it liquifies and add Pectin.
4. Clean and then seed the Carolina Reapers. Dice the Reapers very fine and then add to the liquefying berries and bring to a boil.
5. Add sugar mix thoroughly and bring back to a boil
6. Boil for 2 minutes
7. Skim the “foam” from the top of the jam.
8. Add jam to Hot Jars, clean the rim, add the lids.
9. Return to boiling water bath for 10 minutes
10. Remove and place on the counter for 24 hours.
11. Make sure to label it, It’s Hot.
