A delicious, frugal, easy breakfast recipe that you can make ahead or in the morning. It is packed full of protein with lots of eggs and lots of vitamins from the squash. (See recipe below)

PUMPKIN CUSTARD
This recipe is really flexible. I have made it with more and less eggs than what you saw here in the video. I also make it with lots of spices some days and very little spices other times. You can really play with it and make it what you want.

4 cups pureed pumpkin or winter squash
or 2 (14 ounce) cans of pumpkin puree
¼ cup milk or milk substitute - We like canned coconut milk
¼ cup molasses
1 ¼ teaspoon freshly grated ginger (optional)
10 eggs
1 cup brown sugar (Adjust to taste. We often use less.)
1 ½ teaspoons cinnamon
½ teaspoon cloves
¼ teaspoon freshly grated nutmeg

Mix together until all ingredients are incorporated and batter is smooth. Pour into a greased 9"x13" cake pan and bake until center is firm and a knife comes out clean when inserted in the center (approximately 30-40 minutes).
