🔴📒Recipe: Massaman Curry Chicken มัสมั่นไก่

- 1 kg Chicken
- 150 g Massaman Curry Paste
- 600 g Potato
- 300 g Onion
- 1 Liter Coconut Milk
- 300 ml Water
- 50 g Peanut

Seasonings;
- 4 tbsp Tamarind Paste
- 5 tbsp Palm Sugar
- 6 tbsp Fish Sauce

Aroma;
- 3 Cinnamon Sticks
- 4 Bay Leaves
- 5 Star Anise
Optional - Some Cashew Nuts

🔴📒Recipe: Red Curry Chicken Bambooshoots แกงไก่หน่อไม้

- 500g Chicken
- 100g Red Curry Paste
- 100g Preserved Bamboo Shoot
- 4-5 Chilis
- 4-5 Kafir Lime Leaves
- 1/2 tbsp Salt
- 1 tbsp Palm Sugar
- 1 tbsp Fish Sauce
- 200 ml Coconut Milk
- 400 ml Thin Coconut Milk (Mix Water:Coconut Milk 1:3)

🔴📒Recipe: Thai Green Curry Chicken แกงเขียวหวานไก่

- 3 tbsp Green Curry Paste
- 300 g Chicken
- 400 g Coconut Milk
- 200 g Water
- 200 g Thai Eggplants
- 5 - 6 Kaffir Lime Leaves
- 1 handful Thai Basil
- 1 tbsp Palm Sugar
- 1 - 2 tbsp Fish Sauce [Depends on the taste of your green curry paste. Some are saltier, some are less. Adjust to what you like :) ]
- Red Chili or Red Bell Pepper for garnishing

*NOTE: You can replace eggplant with vegetables of your choice.
Alternative vegetables that are recommended: Potatoes, carrot, bambooshoots, pumpkin, aubergine, wax gourd, long green bean, zucchini.
*Substitute for Thai Basils: Regular basils or sweet basils

📖 Menu Information :

〽️ Massaman Curry
Massaman curry is the mildest spice in all 3. It is known as a Thai curry but originally the ingredients are from Muslim traders from Persia, the Indian subcontinent and the Malay archipelago (e.g. cardamom, cinnamon, bay leaves, etc.). When these ingredients were brought to Thailand, Thais combined with ingredients that are commonly used locally (e.g. coriander, lemongrass, galangal, etc.).
And it became the Massaman we're having these days.
In the past, beef was the choice of meat to make this menu but these days there's no limit and the choice of the protein is yours.

〽️ Red Curry
More spicy, deep flavors from herbs that are commonly found in South East Asia.
The red coloring derived from dry red spur chillies. The main ingredients include (dried) red chili peppers, garlic, shallots, galangal, shrimp paste, salt, Kaffir lime leaves, coriander root, coriander seeds, cumin seeds, peppercorns and lemongrass.
These days, there're huge numbers of brands producing ready made paste and the taste from each brand and each household(if homemade) can be slightly different. Some are stronger, some are milder.

In Thailand, we have so many types of curry that are red. The ingredients can be slightly different depending on which part of Thailand it's from.
The south of Thailand where I'm from, we use a lot of turmeric in curry pastes which makes most of Southern Thai curries yellow and not red as the other regions.

〽️ Green Curry
The name "green" curry comes from the color of the dish, which comes from green chillis. Green and red chilis are slightly different.
The red are always more spicy while the green contains more spice fragrance. That's why you might see many Thai dishes contain both red and green chilis. To deliver both spicy flavor and spicy fragrance.

Always go with coconut milk, that's why the taste is milder than the red curry. The herb that makes this dish special would be Sweet Thai Basils. Smells similar to Italian basils but more intense.
