Ingredients:
200 g red lentils (7 oz)
1 red onion
1 clove of garlic
Some olive oil
A handful of fresh parsley
20 g peanuts (about 2 tbsp + 1 tsp)
1 tsp salt
1/2 tsp black pepper
2 tsp curry powder
2 tbsp cornstarch
vegetable oil for frying

For the dressing:
200 ml yoghurt or a vegan alternative (equivalent to about ¾ cup)
A little cucumber
juice 1/2 lime
salt to taste
Black pepper to taste
