RECIPE
- Place brisket on top rack of smoker with water pan underneath at 7PM the night before at 190 degrees for 12 Hrs (7 PM- 7AM)
- The next morning at 7AM, add ice to the water pan and increase smoker temperature to 300 degrees
- Continue to cook for 5 hours or until the internal temperature of the brisket reaches 190 degrees, whichever is sooner. (20 hours total cook time)
- Remove brisket and wrap in tallow-soaked butcher paper, place in aluminum pan with 1/2 cup water and foil tightly
- Hold brisket at 150 for 5-6 hours or longer until dinner time (26 hours total cook + hold time)
- Remove brisket, slice and serve.
