Foxtail Millet Upma Recipe is a wholesome breakfast or dinner dish that can be made with just a few ingredients.
Foxtail Millet is a good substitute for semolina or rava, they are high in fiber and rich in nutrients. They are filling and hence make a good diabetic friendly ingredient as well.

Ingredients:-

1 cup Foxtail millet
2 cup Water
1 small tomato, chopped
1/2 cup Mixed veggies, (Beans,Carrot,Peas beetroot etc ) finely Chopped
1 Green Chillies, Chopped
Few Coriander leaves, Chopped
1 tsp Lemon juice
1/2 tsp Mustard
1 spoon Split Black gram Urad dal
1spoon Chana Dal
few Curry Leaves
1 Spoon Olive oil
1 tsp salt
1/2 red chili powder
1/2 garam masala
1/2 tsp asafoetida
Ginger chopped

Method:

Wash and rinse the foxtail millet and then soak it in a bowl of water for 3 to 4 hrs.
In a pan, heat 1 tsps of olive oil.
Add one tsp of chana dal, one teaspoon of urad dal, one teaspoon of mustard seeds, and one tsp of curry leaves.
Let the mustard seeds splutter. Then chop the beans, carrot, beetroot, green peas,ginger , chopped tomatoes and add chopped green chillies and saute all the ingredients well.
Now add salt, garam masala, red chili powder & asafoetida, mix then add soaked millet, 2 cup of water, and mix well.
Cover the pan and let the upma cook for 20 minutes.
Serve the upma hot.
