MAIN INGREDIENTS
1.5kg Thịt vịt (duck meat)
800g khoai môn (taro)
AROMATIC SPICES
40g Hành tím (shallot)
30g tỏi (garlic)
3 tép sả (lemon grass)
10g gừng (ginger)
50g gừng để sơ chế vịt (ginger for deodorize duck meat)
SPICES FOR COOK DUCK STEPS
130g Chao đỏ : 100g cái + 30g nước chao (Red yeast fermented bean curd)
2 Tbsp đường (sugar)
1 Tsp bột ngọt (MSG)
1 Tsp ớt bột Hàn Quốc để tạo màu (Korean chili powder)
Ớt sa tế / ớt tươi (chilli paste / fresh chili)
2 Tbsp dầu màu điều / bột màu điều (annatto oil / annatto powder)
1 mc Rượu nấu ăn (cooking wine)
1lit nước dừa (coconut water)
600 ml nước lạnh (clean water)
TOPPING INGREDIENTS
500 Bún khô hoặc tươi (fresh / dried white noodle)
Rau muống , cải ,hành lá , một ít rau thơm tùy thích (vegatables : water spinach, green onion … up to you)
Chanh , ớt làm nước chấm (lemon, chili for making dipping sauce)
