Everywhere on the internet, there are claims that Gouda dates back to 1184 and is one of the oldest cheeses in Europe still made today. But not only is this mysterious record almost impossible to identify or track down, Gouda as we know it today is in fact a product of 17th century Dutch cheese making innovation.
