In this video I show you how to make a sourdough from scratch, without specific amounts of the ingredients, only the process and why the ferments.
Remember, for a sourdough to start fermenting, it needs Water, Food (flour or fruit puree) and temperature (between 28-30CÂş). These conditions favor that organisms, bacteria, become yeasts to carry out the transformation of the elements. At the end of our sourdough, our yeasts (OUR PET) use the resources (starch and water) to convert them into different elements, firstly C02 and ethanol, come on, what is called an alcoholic fermentation. From this fermentation, what ends up interesting us is the CO2, since it is what will give the volume to our various doughs.
Remember also, that in case it starts to smell very acidic .. (like vinegar or yogurt) Remember that you have to feed it .. since it has run out of food (starch) and the yeast begins to "get drunk" .. it starts to feed on ethanol and produces different acids ... So when it starts to smell strongly of vinegar. HE IS HUNGRY !
