Hi guys!
This is the third cake request video.
In fact, in the previous video, I have made a really velvety Red Velvet Cake.
But there were so many requests for this cake.
So I got a new one with a variation on my chocolate sponge cake recipe.
It's really soft and it melts in your mouth.
This time, I picked “Red Yeast Rice Powder” for this recipe again.

In my old version Red Velvet Cake recipe, the red color came out beautifully even without red food coloring.

If you don't get Red Yeast Rice Powder,
you should need 15g of cocoa powder, 85g of cake flour, and 6g or more of food coloring.

My fluffy Red Velvet Cake needs 3g of food coloring to get vivid red.
Comparing to the normal Red Velvet Cake recipe, it is a significantly smaller amount.
When you do not add any coloring, you will get a slightly reddish brown cake sheet.

I tested various food colorings for this recipe.
The powdered coloring was good even with a small amount (1g) (ex Deco Relief).
Next, I recommend a gel-type coloring (ex. Wilton).
I tested a lot of water type coloring, the color didn't come out well.
In this video, I added 3g of Wilton's coloring.

You will love this yummy, fluffy, and soft cake. Just perfect.
My son said it was the most delicious cake he has ever eaten.

Ingredients

♥︎ Red Velvet Cake sheet (gram/ US cup)

70g (1/2 cup + 2 tsp) cake flour
20g (2 tbsp) red yeast rice powder
10g (1 tbsp + 1tsp ) cocoa powder

[When there is no red rice powder]
85g (1/2 cup+ 2tsp) cake flour
15g (2 tbsp) cocoa powder
6g (3 tsp) or more of red food coloring
--------------------------------------------

45g(3 tbsp) hot heavy cream
2g (1 tsp) instant coffee powder
10g (2 tsp)vanilla extract
2 pinches of salt
3g(1+1/2 tsp) gel-type red food coloring

3 eggs (approx. 160 g)
125g (2/3 cup - 2tsp )sugar

2 egg whites (approx. 70~75g)
70g (1/3 cup) sugar

♥︎ Cream cheese frosting
400g (2cup - 4 tbsp) cream cheese
240g (1 cup) heavy cream
55g (1/4 cup + 2tsp) sugar


♥︎ syrup
60g (3 tbsp) water
15g (1 tbsp + 1/2 tsp) sugar
Mix water and sugar, apply once, boil, and cool completely before use.
