In this recipe for pork cheeks in red wine, I start by cleaning the cheeks. Then, I sear the cheeks by cooking them with plenty of oil in a pot. Next, I peel and chop all the vegetables that I will use to prepare the red wine sauce. I cook the vegetables and then reintroduce the cheeks. I add the red wine and, once the alcohol has evaporated, I add beef broth or water.

If you are cooking the pork cheeks in red wine in a conventional pot, you should cook them for approximately 2 to 3 hours. Make sure the meat is tender. Additionally, occasionally add beef broth, up to a maximum of 500 ml, and mix the cheeks.

If you are cooking the pork cheeks in red wine in a pressure cooker, cook everything for an hour.

To make the best red wine sauce, you should finely chop the vegetables. Also, if the red wine sauce becomes too liquid, add 1 tablespoon of flour or cornstarch and cook for a couple of minutes before adding the pork cheeks.

If the sauce becomes too thick, add a bit more broth, water, or red wine.
