After searching and looking through so many videos on fire management I have finally come up with a system that works for me and my Workhorse 1975 Pitt.

I have been cooking for almost two years on a large commercial ‪@FornoPiombo‬ pizza oven and I believe I had mastered cooking with wood until I purchased the Workhorse 1975. The Workhorse is an amazing piece of art; it's gorgeous and cooks like a machine once you figured out the fire management. It's important to note two things: first, there is a huge difference in how different Pitts cook, and second, there are many different opinions on how to manage the fire; my best and greatest advice is not to be stuck on keeping the temperature at a precise number throughout the entire cook, its can vary 5-10 degrees and that is ok and must important cook and develop your own program. This video is not the bible, it's simply my system of what works best for me. Cook and enjoy the journey.
