Braised Chicken Breast Rice

Ingredients:
Chicken breast
Onion
Shiitake mushrooms
Boiled eggs
Light soy sauce
Dark soy sauce
Shaoxing wine
White pepper
Chinese five-spice powder (or “Thirteen-spice”)
Sugar
Hot water

Instructions:

1. Prepare the ingredients: Cut the chicken breast into chunks, slice the onion and shiitake mushrooms, and set them aside.
2. Make the sauce: In a bowl, mix 4 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 3 tablespoons of Shaoxing wine, 1 teaspoon of Chinese five-spice powder, and a pinch of white pepper.
3. Stir-fry the ingredients: Heat a pan with a little oil. Add the sliced onion and stir-fry until softened. Then add the shiitake mushrooms followed by the chicken breast, cooking until the chicken changes color.
4. Add the sauce: Pour the prepared sauce into the pan and add enough hot water to cover the ingredients. Stir everything together.
5. Season to taste: Add a small amount of sugar to taste. If you prefer a sweeter dish, feel free to add more sugar.
