Aloo Dum Biryani | No Onion No Garlic - Perfect Vegetarian Biryani | Biryani recipe by Sattvik Kitchen

Basmati Rice / Biryani Rice - 500 grams
Water - 2 cups (to soak)
Water - 1.5 litter
Salt - 1 Tsp
Bay leaf - 2 no’s
Cloves - 2 no’s
Black pepper balls - 4 no’s
Star Anise - 1
Cumin seeds - 1/2 Tsp
Lime juice - 1 Tsp
Oil - 1 tbsp
Note : Cook 70% (Al dente)
2. Prepare Gravy : 03:10
Coriander leaves - 10 grams
Mint leaves - 15 grams
Green Chilli - 2 no’s
Ginger - 1 inch
Homemade Biryani Masala - 2 Tsp
Pomegranate powder - 1 Tsp
Salt - 1/2 Tsp
Curd - 1/2 Cup
3. Soak Saffron (Optional) 04:06
Water - 2 Tbsp
Kesar / Saffron strands - 3 or 4
Red Food colour - 1 pinch
4. Aloo gravy Preparation 04:23
Baby potatoes - 350 grams
Oil - 5 Tbsp
Shredded cabbage - 1 cup
Salt - 1/2 Tsp
5. Assembly - 06:44
Aloo layer
Rice layer
Sprinkle Biryani masala - as per taste
Coriander leaves
Fried cabbage
Saffron water
Ghee - 3 Tsp
