通菜,又名蕹菜,有旱蕹和水蕹之分。旱蕹莖幼葉細,顏色較深,菜味較濃,普遍東南亞菜都會用上旱蕹。水蕹莖粗葉大,顏色較淺,在香港餐廳出品的椒絲腐乳通菜一般用水蕹。通菜一般於夏秋兩季比較「當造」。新鮮的通菜口感爽脆,加上腐乳的鹹香、椒絲帶來的微辣,是不少廣東人都十分喜愛的夏日菜式。
