After trimming ,cleaning and an overnight dry brine. I marinated these beautiful lamb loin chops in rosemary ,olive oil, garlic ,preserved lemon and few spices (cumin, coriander,paprika,salt and pepper).
I used the SNS kit to reverse sear these loin chops on the Weber Kettle.the final result was tender ,juicy and flavorful lamb .
