A slightly burnt sausage on the barbecue may not be that tasty anymore, but it certainly can't hurt. However, such a sausage is not as innocent as you think. Toxins are released when they turn black; the same happens with burnt potatoes. But that is not the case with vegetables. Nynke Kramer, toxicologist from Wageningen University, explains why and what is so dangerous about burnt food.
