Bacon-Wrapped Cauliflower Meatballs Served In A Creamy Cheese Sauce
Cauliflower is a total superstar. Not only is it the main ingredient in a ton of health trends, it's the perfect substitute for anyone who wants to eat more low-carb and low-fat meals. But rather than keeping cauliflower tied to it's extra healthy reputation, we want to get back to its flavor. This recipe for bacon-wrapped cauliflower meatballs is bringing out the best in cauliflower! And did we mention we're serving it up in a creamy cheese sauce? Now that's a showstopper of a dish!

Ingredients:

For the bacon-wrapped cauliflower meatballs:

- 1 head of cauliflower
- 1 tbsp salt
- 1½ lbs ground beef
- 12 oz bacon
- 2 eggs
- 1 red onion, diced
- 2 garlic cloves, minced
- 1 tsp mustard
- 1 tbsp paprika
- 1 tbsp oregano
- 1½ tsp salt
- 1 tsp pepper

For the cheese sauce:

- 1⅔ cups milk
- 2 cups shredded Swiss cheese
- salt, pepper & nutmeg to taste
- parsley to garnish
