Paella is Spain's national dish. It tastes delicious, but can be expensive to make at home, especially for family midweek dinners. Today I share a recipe with tips to make this dish really affordable that once you try will become a family midweek dinner favorite.

PAELLA ( for midweek dinners)
Serves 4-6

1 12" double handle frying pan

6 chicken thighs
6 raw (shell on) gulf shrimp
1 1/2 cups jasmine rice
3 cups chicken broth
1 tsp turmeric
1 bell pepper (cut into bite size pieces)
1 bunch green onions (chopped)
olive oil
salt and pepper

Heat the pan, season the chicken thighs with salt and pepper and sear until golden brown with a little olive oil. Remove the chicken to a plate. Add a little more olive oil and then the bell peppers and a pinch of salt. Reduce the heat and soften without coloring.

Stir in the rice, turmeric and green onions. Add the chicken broth and bring to a boil. Add the chicken and place in the oven at 350 degrees for 20 minutes (If you are adding shrimp remove from the oven after 15 minutes and add the shrimp with a drizzle of oil - cook a further 5-8 minutes)
