How to make soft and fluffy Apple Cinnamon Muffins.
Here's what you'll need:
1 cup diced apples (150g)
2 tbsp sugar (30g)
1 tsp cinnamon powder (3g)
2 eggs (room temp)
3/4 cup sugar (150g)
1/3 cup melted butter (75g)
1/2 cup plain yogurt (125g)
2 tbsp milk (30ml)
1 tsp vanilla extract (5ml)
1 and a half cup all purpose flour (190g)
1/2 tsp baking soda (4g)
1/2 tsp salt (3g)
1 tsp cinnamon powder (4g)
Some brown sugar to sprinkle on top
Note: If yogurt is not available, you can skip it and use 1/3 cup of milk instead. Just a bit of difference in the texture but still yummy.
1. Preheat oven at 180C/350F. In a small bowl, mix together diced apple, brown sugar and cinnamon powder.
2. In a mixing bowl, bowl, mix together eggs, melted butter, sugar, yogurt, milk and vanilla
3.Add pre-sifted flour, baking soda, salt and cinnamon powder. Mix just until combined. Not more than 30 seconds.
4. Add prepared diced apples. Mix a bit.
5. Place in a lined muffin tray. Sprinkle some brown sugar.
6. Bake in a preheated oven for 25-30 minutes or until toothpick comes out clean when inserted.
7. Serve and enjoy!
