Unniyappam is one of those special sweets snacks from Kerala and are also served in the Onam Sadya. They are also offered as prasad in some temples in Kerala.

Ingredients
1kg Rice powder
1/2kg Wheat Flour
1/2kg Maida
2½ kg Jaggery
1 Coconut fried in ghee till light brown shade
2tbsp Black sesame seeds
2tbsp cardamom crushed
3tbspn Ghee
1sp dry ginger powder
Oil (for deep frying, I used coconut oil)
salt

Instructions

Add 1 cup water to jaggery and melt it. Strain the jaggery and let it cool completely.

Fry the coconut in ghee till it turns light brown.
Take the soaked rice and transfer it into a blender also add cardamom and a little bit of melted jaggery and grind it into a thick paste. After that pour it into another bowl then
add wheat flour and maida and mix it using jaggery little by little till you get the consistency of idli batter. You may need around 1-1.5 cups of water. Add fried coconut bits and sesame seeds mix well. Also add ghee into it and mix well also add a pinch of salt.

Now we can start making unniyappam . Heat oil in appachatti (pan), when the oil is really hot, reduce the flame to low-medium. Drop tablespoons of batter to the chatti. Keep turning the unniyappams in between, till you get a golden-dark brown colour on both sides. Drain excess oil on tissue paper. That is it our very easy and tasty unniyappam is ready to serve.
