Resep Kulit Ayam Goreng Krispi (untuk 4-5 porsi)

Bahan:
500 gr - 1 kg kulit ayam
10 siung bawang putih
5 cm kunyit
5 lembar daun salam
4 cm jahe
1 batang serai
1 ½ sdt garam
2 sdt kaldu ayam
2 sdm gula pasir
1 sdm cuka
1 liter air
60 gr santan, opsional
½ sdt merica
Minyak untuk menggoreng

Bahan saus:
1 ½ sdm saus tomat
3 sdm saus sambal
1 sdm gula pasir
100 ml air
1 sdt cuka

Langkah:
1. Haluskan bawang putih, kunyit dengan sedikit kaldu ayam dengan ulekan
2. Panaskan minyak, tumis bumbu hingga wangi lalu masukkan serai, jahe, dan daun salam, aduk rata
3. Masukkan merica, masak hingga wangi lalu tambahkan air, santan, cuka, sisa kaldu ayam, garam, dan gula, aduk rata
4. Masukkan kulit yang telah bersih, masak selama 15 menit, tiriskan hingga dingin
5. Panaskan minyak, goreng kulit di api kecil hingga kecokelatan, tiriskan
6. Untuk saus, campurkan saus tomat, saus sambal, gula pasir, air, dan cuka, masak hingga mendidih sambil diaduk
7. Kulit ayam goreng krispi siap disajikan dengan saus sebagai pelengkap

Crispy Fried Chicken Skin Recipe (yield 4-5 servings)

Ingredients:
500 g - 1 kg chicken skin
10 clove garlic
5 cm turmeric
5 pc bay leaf
4 cm ginger
1 pc lemongrass
1.5 tsp salt
2 tsp chicken powder
2 tbsp sugar
1 tbsp vinegar
1 L water
60 g coconut milk, optional
½ tsp pepper
Oil for frying

Sauce ingredients:
1.5 tbsp tomato sauce
3 tbsp chili sauce
1 tbsp sugar
100 ml water
1 tsp vinegar

Steps:
1. Mash the garlic and turmeric with some chicken powder in a stone bowl.
2. Heat the oil. Sauté the mashed spices until fragrant, then add lemongrass, ginger, and bay leaves. Stir.
3. Season with pepper. Cook until fragrant, then add water, coconut milk, vinegar, the rest of the chicken powder, salt, and sugar. Stir.
4. Add the rinsed chicken skin. Cook for 15 minutes. Drain and let cool.
5. Heat the oil. Fry the chicken skin on low heat until browned. Set aside.
6. For the sauce, combine tomato sauce, chili sauce, sugar, water, and vinegar. Bring to a boil while stirring.
7. Crispy Fried Chicken Skin is ready to serve with the sauce on the side.
