Try this healthy and tasty soybean sprout rice, it's called Kongnamul bap in Korean. It’s one of the easiest dishes to make and you can make it in your rice cooker or cast iron pot. It goes very well with perilla leaves. To make this vegan-friendly, you can simply omit the beef!

For 4 servings
➥ INGREDIENTS
3 cup soybean sprout (rinse and cut any brown bits before use)
2 cup rice
1/2 pound ground beef
1 cup shimeji mushroom (you can use shiitake or oyster mushroom)
1 1/2 tbsp soy sauce
1 tsp brown sugar
1 tbsp mirin
1 1/2 cup water
2 tsp cooking oil

Seasoning sauce
1-2 green onions, minced - leave some for toppings
1 jalapeno, minced - leave some for toppings
1 red hot chili pepper, minced - leave some for toppings
1/3 cup soy sauce
1 tsp minced garlic
1 tbsp sesame oil
2 tsp sesame seeds

Topping
4 perilla leaves, thinly sliced - optional
1 sheet roasted seaweed

0:06 Rinse the rice and set it aside for 20 minutes.
0:19 In a heavy-bottomed pot, add 2 tsp of cooking oil on medium heat.
0:22 Add ground beef. Break up chunks with your spoon or spatula.
0:31 Add soy sauce, brown sugar and mirin. Stir and cook for 2-3 minutes or until fully cooked.
0:46 Add rice. Spread the rice in an even layer and add water.
1:00 Add water.
1:05 Add soybean sprouts. Cover, bring it to a boil on medium heat.
1:24 On low heat, simmer for 20 minutes.
1:30 Prepare the seasoning sauce, mince the peppers, green onion, add soy sauce, sesame oil, sesame seed and minced garlic.
2:15 Prepare the toppings.
2:44 Add shimeji mushroom, cover and let stand for 5 minutes.
2:55 Mix well and serve when it's hot.
Serve with sauce.
