Resep Brokoli Saus Tiram & Tim Telur (untuk 5-6 porsi)

Bahan tim telur:
2 butir telur
200 ml air
¼ sdt garam

Bahan tumisan:
2 bonggol brokoli
1 sdm garam
800 ml air
½ buah bawang bombai
5 siung bawang putih
2 sdm minyak

Bahan saus:
2 sdm kecap asin
2 sdm saus tiram
1 sdm gula pasir
1 sdt kaldu ayam bubuk
350 ml air
2-3 sdm maizena

Langkah:
1. Campurkan air, telur dan garam, kocok lepas lalu pindahkan ke dalam wadah tahan panas sambil disaring
2. Tutup dengan alumunium foil lalu kukus selama 20-30 menit di api sedang kecil
3. Potong besar-besar brokoli lalu kupas bagian luar batang brokoli, potong
4. Cuci bersih brokoli lalu rendam dengan air dan garam selama 5 menit kemudian bilas
5. Iris bawang bombai dan cincang bawang putih
6. Untuk saus, campurkan air, saus tiram, kecap asin, gula pasir, kaldu ayam dan maizena, aduk rata
7. Rebus brokoli hingga matang, tiriskan
8. Panaskan minyak, goreng bawang putih hingga sedikit kecokelatan, tiriskan
9. Di dalam wajan yang sama, tumis bawang bombai dan brokoli, aduk rata kemudian tuang saus, masak beberapa saat hingga mengental
10. Tuang tumisan di atas tim telur lalu taburkan bawang putih goreng di atasnya
11. Brokoli saus tiram tim telur siap disajikan

Broccoli with Oyster Sauce & Steamed Egg (yield 5-6 servings)

Steamed Egg ingredients:
2 pc egg
200 ml water
¼ tsp salt

Stir-fry ingredients:
2 pc broccoli
1 tbsp salt
800 ml water
½ pc onion
5 clove garlic
2 tbsp oil

Sauce ingredients:
2 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp sugar
1 tsp chicken powder
350 ml water
2-3 tbsp cornstarch

Steps:
1. Mix water, eggs, and salt. Loosely beat the eggs, then strain into a heat-proof bowl.
2. Cover the bowl with aluminum foil. Steam for 20-30 minutes on medium-low heat.
3. Slice the broccoli into large florets. Peel the stem and slice the core.
4. Wash the broccoli, then soak it with water and salt for 5 minutes. Rinse it.
5. Slice the onion and mince the garlic.
6. For the Sauce, mix water, oyster sauce, soy sauce, sugar, chicken powder, and cornstarch.
7. Boil the broccoli and set aside.
8. Heat the oil. Fry the garlic until a bit yellowed. Set aside.
9. In the same pan, stir-fry the onion and broccoli. Add the sauce in, stir, and cook for a moment until the sauce thickens.
10. Pour the Broccoli Stir-Fry on top of the Steamed Egg. Sprinkle Fried Garlic on top.
11. Broccoli with Oyster Sauce & Steamed Egg is ready to serve.
