This turned out 10/10!
I soaked chickpeas from the day before and then boiled chickpeas, carrots and Celery in one pan. When they were cooked- put them in blender, (add extra veggies if you want, in my case i had canned beans) add soy milk, olive oil, spices and you get velouté texture of the soup.
For dressing on top:
separately I cooked mushrooms and tofu.
It was super yummy and I will definitely make it again and again!
